Profile & Story

Podere Le Ripi is a Montalcino estate practicing biodynamic viticulture, holding Demeter, organic (biologico) and Triple A certifications. Cappuccetto Rosa -- the winery's first-ever rosé -- is a direct press of manually harvested (late August) Sangiovese from a vineyard dedicated entirely to this wine, destemmed with the skins separated the following day. Fermentation uses indigenous yeasts, followed by 10-12 months of aging in stainless steel. Grown on sedimentary alluvial soil (galestro, alberese and granitic elements), Guyot-trained at 6,000 plants/hectare, yielding 50 quintals/hectare. Alcohol 12%; roughly 6,600 bottles produced.

Tasting Notes

A charismatic, flavorful and approachable rosé with floral aromas, small red fruits and candy-like sweetness on the nose, finishing with a saline character that lends versatility across serving temperatures.
