Champagne Chavost takes its name from the small village of Chavot-Courcourt, south of Epernay, home to a growers' cooperative founded in 1946. For decades the co-op sold its grapes rather than bottling under its own name, until Fabian Daviaux, great-grandson of one of the co-op's founders, became chef de cave in 2019 and set out to show what the village's terroir could do on its own. The vineyards are in conversion to organic farming, and Daviaux vinifies without manipulation: no chaptalization, no acidity correction, native-yeast fermentation, and no sulfur added even at bottling. Blanc d'Assemblage Brut Nature blends Chardonnay and Pinot Meunier from the co-op's best parcels into a pure, unmanipulated expression of the vineyards around Chavot.
Tasting Notes
Pale gold with a fine, persistent mousse. The zero-dosage, unsulfured winemaking shows through in pure orchard-fruit aromas and classic yeasty, bready notes, with a scintillating chalky minerality underneath. The palate is savory and structured, with precise acidity and fine, silky bubbles balancing the wine's fruit-driven charm.
