This Sauvignon Blanc comes from Domaine Guy Allion, a family estate on the right bank of the Cher in Thesee, in the Touraine appellation of the Loire Valley, bottled under the Domaine du Haut Perron label. Cedric Allion continues four generations of family winemaking, farming clay-and-limestone-over-flint soils that give the estate's Sauvignon its trademark crisp minerality.
Tasting Notes
Pale yellow with green highlights, perfectly clear and bright. The nose is inviting, with green apple, citrus, and white flowers over a fine, boxwood-like herbal edge that persists after aeration. The palate is supple yet lively and well balanced, with citrus and herbal notes returning on the finish.
Pairing Recommendation
The estate suggests serving cool with oysters, mussels, and shrimp, simply prepared white fish with fresh herbs, salads, vegetarian dishes, goat cheese, and Asian or Mediterranean cooking.
