About the Wine
The 2020 La Frenz Aster is a Méthode Traditionnelle sparkling wine made from 100% estate-grown Chardonnay and Pinot Noir grapes. The fruit was hand-harvested from the Freedom 75 and Desperation Hill vineyards. The grapes were whole-cluster pressed, with only the free-run juice used for the cuvée. Each variety underwent cool primary fermentation separately in stainless steel tanks, with a portion fermented in neutral French oak. The wine underwent 100% malolactic fermentation before being blended, clarified, and bottled unfiltered for secondary fermentation. After a long, slow secondary fermentation, the wine aged sur-lie for 3 years before dosage and disgorging in April 2024. The ABV is 11.7%, and the wine has an aging potential of 5 years from release date.
Tasting Notes
Bright golden straw in color with a very fine, persistent mousse. Aromas of apple blossom, Bosc pear, and brioche, complemented by notes of biscuit, wild strawberry, lemon rind, and sweet nuttiness. The finish is sumptuous and well-rounded.
Pairing Notes
Perfect with freshly shucked oysters or grilled mussels from the West Coast.
