Domaine Sérol has farmed the granite hillsides of the Côte Roannaise for five generations, now under Stéphane Sérol, working 38 hectares of Gamay Saint-Romain between 400 and 550 meters altitude. Cabochard — French for "stubborn" — marked Stéphane's own break from tradition: a dry, direct-pressed rosé made from pure Gamay.
