Parés Baltà farms the Valls d'Anoia-Foix subzone of Penedès, certified organic since 2002 and biodynamic since 2012; in 2022 D.O. Cava named it one of only 14 'Elaborador Integral' producers nationwide, confirming full control from harvest to bottling. This Cava de Guarda blends hand-harvested Macabeo, Xarel-lo and Parellada, aged a minimum of nine months on the lees in bottle.
