Domaine de l'Aumonier is the family estate of Sophie and Thierry Chardon in Couffy, on the Cher river in Touraine (Loire Valley), founded in 1996. Thierry, descended from a family of winemakers, returned to viticulture after an earlier career as a firefighter. The estate has farmed organically since 2006 and became biodynamic-certified in 2023, cultivating Sauvignon Blanc, Chardonnay, Chenin, Gamay, Cot and Cabernet Franc on chalk-and-clay soils.
