Profile & Story

Stephane Coquillette is the fourth generation of his family to grow and make wine in Champagne; his grandmother was the first to bottle Champagne in the village of Chouilly, her wines shown at a Paris fair in 1928 under the Pierre Coquillette label. Wanting wines entirely his own, Stephane created his own label in 1979 at the age of 25, owning no vines at the time, and has since assembled around 6.5 hectares across Chouilly, Cuis, Ay and Mareuil. In 2000 he bought an old cooperative building in Chouilly for its cellars and had a cuverie built there in 2001, so all his wines are now made and aged in his own facilities. The vineyards are farmed organically though uncertified, all work done by hand, with cover crops, no chemical herbicides and only organically certified fertilisers. Fermentation is in stainless steel and all the wines go through malolactic. Cuvee Inflorescence is a comparatively red-grape-led blend of 67% Pinot Noir and 33% Chardonnay.

Tasting Notes

Aromas of cut flowers and warm spices; lush and rich on the palate with an underlying intense minerality, lively acidity and pronounced chalky minerality balancing the rich, creamy body before a crisp, delicate finish.
