Profile & Story

Domaine Fabrice Gasnier farms in the Chinon appellation using traditional, terroir-driven methods across multiple parcels. Queue de Poêlon is 100% Cabernet Franc from 70-year-old vines on a plain between the Vienne river and the hillside slopes, on clay-silica soil over limestone with full southern exposure. The grapes are destemmed and gravity-fed into small concrete vats for parcel-specific fermentation with indigenous yeasts over about 32 days, then aged 12 months in concrete tank before bottling 15 to 18 months after harvest.

Tasting Notes

Old-vine Cabernet Franc from Chinon's clay-limestone soils typically shows red fruit, gentle spice, and fine, chalky tannins.

Pairing Recommendation

Described by the producer as an easy wine to pair with refined dishes — recommended with roasted white or red meats, larded monkfish, tuna, salmon, and cheese. Serve at 15-18°C.
