Profile & Story

Champagne Drappier, based in Urville in the Aube, is recognized as Champagne's first carbon-neutral house and has grown Pinot Noir in the Aube since the 1930s. Its Rosé de Saignée is produced by the saignée method, used by only a handful of Champagne houses: several days of skin maceration on Pinot Noir extract color and flavor complexity directly from the grape skins rather than through blending in still red wine.

Tasting Notes

The nose offers red fruit and violet with a light spiced note. The palate is remarkably expressive and fresh, balancing a restrained dosage with vibrant fruit, and the finish carries a subtle trace of licorice.
