The Fornerot family has farmed in Saint-Aubin for more than 500 years; Jérôme Fornerot established his own domaine in 2004 with 4.5 hectares in Santenay and Maranges, adding his first parcel in Saint-Aubin in 2013. Champ Tirant lies just behind the village of Saint-Aubin on a steep, south/southeast-facing slope of predominantly clay-limestone soil, farmed under reasoned (lutte raisonnée) practices on young vines. The hand-harvested grapes are lightly crushed and pressed in a pneumatic press; the settled juice moves by gravity into barrel to ferment with indigenous yeasts. The wine is aged entirely in oak, 15% new, for 12 months, then blended in tank for three months before bottling at the domaine.
