Laherte Frères was founded in 1889 by Jean-Baptiste Laherte in the village that became Chavot, and today farms roughly 11 hectares across the Champagne region, largely by organic and biodynamic methods, under seventh-generation grower Aurélien Laherte, a founding member of the progressive "Terres et Vins" collective. Les Beaudiers Rosé de Saignée comes from a low-yielding parcel of old Meunier vines planted in 1953, 1958, and 1965, with occasional Chardonnay, Pinot Noir, and Fromenteau also found in the plot. The grapes are destemmed and macerated for 12 to 16 hours, then fermented in barrel with no malolactic conversion, aged a minimum of four years, and finished with a dosage of 0-5 g/L depending on the vintage.
