About the Wine
A lightly sparkling rosé made from Pink Semillon, Viognier, Pinot Noir, and Syrah, sourced from three biodynamically farmed estate vineyards in the Adelaide Hills (Rufus, Summit, Iluma). The 2022 season was cool with steady ripening. Syrah and Pinot were pressed early for freshness and fermented in barrels and concrete eggs. Viognier and Pink Semillon underwent 7–10 days of skin contact before pressing to barrel. Final blend was sweetened with 14 g/L frozen juice and bottled mid-June 2021 for in-bottle fermentation. No enzymes, fining, or filtration. Alcohol: 11%.
Tasting Notes
This lightly bubbly rosé has an aromatic nose of exotic flowers and musk, pithy grapefruit, fermenting muntries (a native pink orchard fruit), blood orange and citrus blossom. On the palate there it is a summery mixed fruit salad experience that is light and refreshing, yet with a dry textured finish and an undercurrent of fierce acidity.
