Chateau l'Escarelle is a certified-organic estate in the Coteaux Varois en Provence appellation. Its flagship 'Cuvee Chateau' rose blends roughly 50% Grenache, 25% Syrah and 25% Cinsault from shallow, sandy clay-limestone soils at about 250m elevation; grapes are picked mechanically at night to preserve a pale color, vinified in stainless steel, with malolactic fermentation blocked to keep the wine fresh.

The producer suggests it as an aperitif with tapenade, with a warm goat-cheese salad or grilled/braised vegetables, and even with a fruit salad for dessert.
