Profile & Story
Founded by the Silva family in 2003, Poppy sources this Cabernet Sauvignon from two Paso Robles sites, young vines on the sunny, fruit-driven slopes of Sunny Slope and old-vine blocks from neighboring San Juan. A portion of the fruit is thermovinified to soften tannins and deepen color, with the wine aged roughly 18 months in small French oak barrels.
Tasting Notes
Vibrant aromas of blueberry, black cherry, and cassis are layered with licorice, violet, cigar box, and a thread of mocha and vanilla from oak. Medium to full-bodied, with supple tannins and balanced acidity leading to a smooth, lingering finish.
Pairing Recommendation
Ideal alongside grilled lamb, roasted beef, or herb-crusted pork loin.
