NOK Vino farms six small vineyards across New Hampshire, working with hybrid grapes and apples from unsprayed New England orchards. Their co-ferments combine frost-cured apple mash with the skins and stems of red wine grapes in an open-top fermenter, undergo spontaneous fermentation with daily punch-downs, and are pressed in a wooden basket press before aging in a flextank egg.
