Founded in 2020 by Nicolas Monforte and Santiago Degasperi, Proyecto Nakkal makes minimal-intervention wines from Las Violetas, Canelones -- Uruguay's only pet-nat made from Tannat. The grapes are hand-harvested and macerated on the skins for 24 hours before the skins are removed and the juice ferments with native yeast in concrete, with no added sulfites.
