Usonia farms hillside vineyards on the west sides of Cayuga and Seneca Lakes in the Finger Lakes, hand-harvesting and fermenting each variety separately before blending. West! West!! West!!! is their first sparkling release, inspired by Italian rifermentato-style wines: a field blend fermented and aged in a mix of neutral oak and stainless steel, then hand-disgorged over the winter with a splash of fermenting Diamond juice added to capture natural carbonation.
