Domaine Sauvète was founded in 1905 by Georges Sauvète at Monthou-sur-Cher, overlooking the river Cher in Touraine; Mathilde Sauvète, the first woman to lead the family estate, has run it since 2020. The 18 hectares have been farmed organically since 2000 and certified by Ecocert, with a move toward biodynamics in recent years. The Touraine Sauvignon is 100% Sauvignon Blanc from the Mardelle and Bocagerie plateaus, on wind-blown sand over clay, limestone and flint subsoils.
