Profile & Story

Inama farms Monte Foscarino, a volcanic peak at the heart of the Soave Classico zone, where Giuseppe Inama began acquiring parcels in the 1960s; the estate now owns most of the vineyards on the hill and has bottled a single-vineyard wine from Foscarino for nearly thirty years. Garganega -- brought to the Soave Classico area by the Romans roughly 2,000 years ago -- is grown on old vines on basaltic, volcanic soil with southeast exposure. The wine ferments and ages in a mix of stainless steel, large botte and neutral barrique, six months on the lees with regular batonnage, followed by another six months in steel; aging potential is 10-15 years.

Tasting Notes

Fresh, mineral and deep on opening, with wildflower aromas of elderflower, iris and chamomile that develop into more complex notes of pollen and dried flowers with time in the glass. Rich, complex and multilayered on the palate, with an almond note on the finish.

Pairing Recommendation

Vitello tonnato, fish risotto, sushi, baccala alla vicentina with polenta, fish soups, pumpkin or pea puree, risotto with hop shoots and Monte Veronese cheese, and vegetable couscous.
