Fabienne Cottagnoud runs Cave des Tilleuls in Vétroz, in Switzerland's Valais, a 4.5-hectare estate she and Marc-Henri work together, with Fabienne overseeing vinification and Marc-Henri the vineyards. The estate focuses on the indigenous grapes of the Valais and the region's dramatic mineral soils — layers of schist, gneiss, and granite — working as traditionalists who are also willing to experiment in the cellar. This wine is made from Humagne Rouge, a red grape virtually unique to the Valais.
