About the Wine

While often turned into a white wine, Pinot Gris is actually a light red grape. We have been exploring all the possibilities of Pinot Gris, and we are absolutely in love with this varietal. It has largely been treated as an inferior grape, with the assumption that it won’t yield as much money as more noble varietals such as Pinot noir. Therefore, it is often planted and less desirable sites, and therefore makes less interesting wines that demand less money. However, we find, when planted in the right location, Pinot Gris is very much on noble varietal in its own right. We especially love fermenting it on its skin exactly the same way we create single-vineyard Pinot Noirs. The long, cool fermentation took five weeks on the skins, then it was aged for 11 months in neutral French Oak barrels on the lees before bottling unfined and unfiltered.

Tasting Notes

Dried cherries, Chantel, mushrooms, sandalwood, blood, orange, and nectarine.

Pairing Notes

The wine goes very well with savory lighter dishes, Alpine cheeses, and seafood. Specifically, we love to drink this with lightly breaded morel mushrooms, charcuterie, crab cakes, and roast chicken. It would be wonderful with Paella and bouillabaisse as well!
