About the Wine
From historic Denmark Street in Sonoma, the Clouse family has been farming on this property for 5 generations. We harvested the organically farmed Sauvignon Blanc in mid August, and included the few short rows of Sauvignon Musqué and Viognier, adding even more aromatics to the tropical leaning fruit of this site. After 1 week of sealed carbonic whole cluster maceration, the juice was pressed into Napa red clay amphora to finish fermenting. During 7 months of élevage in neutral French oak barrels with no topping, a healthy flor developed, protecting the wine, and adding complex peachy almond characteristics to the wine. Barrels were then topped just before bottling. Zero sulphur added.
