Juan Antonio Ponce enrolled at the Requena school of viticulture and oenology at fourteen and worked for Compania Telmo Rodriguez before founding his own winery in Manchuela in 2005, at twenty-three; the estate is farmed organically and biodynamically. La Xara comes from a recovered 10-hectare vineyard where 40-year-old Garnacha vines root into a mix of clay, limestone and granite under a continental climate touched by cool Mediterranean winds. Recent vintages are fermented with whole clusters in large oak vats and matured for around seven months in a large vat and 600-litre barrels.
