Santa Tresa is an ancient estate near Vittoria in southeastern Sicily dating to 1697, purchased in 2002 by Stefano Girelli and his sister Marina and converted to certified organic farming. Insieme, meaning together in Italian, is an 80% Inzolia and 20% Zibibbo skin-contact blend - hand-harvested in mid-September, destemmed and fermented separately on the skins at controlled temperature, Inzolia for 2-3 weeks and Zibibbo for 6.
