Profile & Story

Hamakawa Shoten is a small brewery in the coastal village of Tano, Kochi Prefecture -- a region famed for catching fatty deepwater fish like bonito, which shapes Kochi's traditionally dry, lean sake style. This Tokubetsu Junmai, nicknamed "The Gentleman," is milled to 60% using Matsuyama Mii rice.

Tasting Notes

Fresh and medium-light bodied with a snappy dry finish; aromas of underripe banana and passion fruit give way to a soft, mellow palate and a finish of lime zest and fresh mint.

Pairs well with raw oysters, carpaccio, and fatty fish like tuna or bonito.
