Profile & Story
Niizawa Sake Brewery, in Miyagi Prefecture, builds its portfolio around an "ultimate food sake" philosophy. Hakurakusei -- named for a legendary Chinese horse breeder renowned for spotting excellence -- is brewed with roughly half the residual sugar of the brewery's more traditional Atagonomatsu label, giving it a drier, food-friendly profile than many contemporary sakes.
