Profile & Story
Asahi Shuzo Sake Brewing Co., of Nagaoka, Niigata Prefecture, is the maker of the acclaimed Kubota line. Manju is the brewery's flagship Junmai Daiginjo, milled to 50% for the koji and 33% for the mash using Gohyakumangoku rice -- a tanrei-karakuchi (dry and crisp) style built for complexity and balance.
Tasting Notes
Complex and flawlessly balanced between umami, sweetness, and tartness, with pleasantly floral aromatics and notes of dried strawberry and nuts on a clean, silky, smooth finish.

Pairs well with eggplant and ricotta rigatoni.
