Also from Hamakawa Shoten in Tano, Kochi Prefecture, Shintaro is named for the 19th-century imperial loyalist Nakaoka Shintaro and is milled to 60% with low-temperature fermentation.

Tasting Notes

Aromas of white peach, green plum, lychee, and acacia lead to a palate of fibrous pear, mint, honeysuckle, citrus rind, and minerals, finishing dry with delicate orchard fruit; enjoyable across a wide temperature range, with warming amplifying its gentle acidity.
