Profile & Story
Domaine de Raissac is an 86-hectare Languedoc estate under the Viennet family, farming a mosaic of soils -- alluvial plain, tertiary-period pebble stones, and limestone-clay hills rich in marine fossils. This Cabernet Sauvignon (the estate's 'La Noria' bottling) ferments at 26°C with a short maceration to extract supple tannins, using classic pumping-over and racking through a three-week fermentation.
Tasting Notes
Garnet-red with violet highlights. Complex aromas of ripe red fruit lead to a powerful, elegant palate with a long, spicy finish showing exotic notes of menthol and licorice.
