Hues 'That Juice!' is a collaboration between Highly Recommended NYC (the New York wine club run by Austin Easterling) and the Pepin wine collective in Alsace. Pepin is not a single winery but a collective founded in 2021 by Jean and Pierre Dietrich of Domaine Achillee in Scherwiller, together with consulting oenologists Xavier Couturier and Pierre Sanchez of Duo Oenologie and organisers Arnaud Gestin and Raphael Madinier; it works with a network of certified-organic Alsace growers who use no synthetic pesticides, insecticides or weedkillers, hand-harvest, macerate systematically for reds and oranges, and then let the wine do its own thing with native yeasts and nothing added or taken away. The 2023 That Juice! is a blend of 30% Gewurztraminer, 25% Pinot Gris, 15% Pinot Blanc, 15% Sylvaner, 10% Muscat and 5% Chasselas, 100% de-stemmed and macerated on the skins for seven days, bottled unfined and unfiltered with no added SO2. The back label reads: "Drink better wine, you deserve it."
