This Sauvignon Blanc is grown by the Guy Allion estate in the Cher Valley, a tributary of the Loire, where the family farms 30 hectares of vines on right-bank hillsides with a southwest-to-southeast exposure. Soils here are clay-limestone and clay-siliceous, with pockets of flint over a limestone base. The estate practices sustainable, traditional viticulture: natural grass cover is maintained between rows, vine treatments are used sparingly, and debudding and green harvesting control yields. Grapes for this cuvée are picked at 3am to slow oxidation, then gently pressed into gravity-fed, temperature-controlled tanks, where the juice settles for 24 to 72 hours before fermenting with indigenous yeasts on the lees.
