Carboniste was founded in 2017 by husband-and-wife team Dan and Jacqueline Person in Sonoma, California. Their Octopus Sparkling Albariño is made entirely from the Gomes Vineyard on Andrus Island in the Sacramento Delta, farmed by the Gomes family since they immigrated from Portugal's Albariño-producing region in the 1800s. The grapes are pressed whole-cluster, settled as juice for two days, then fermented in tank with native yeast for three weeks and given four months of lees aging — a fraction of the time required for traditional Champagne-method wines.
