The Morin family has farmed the same plot in Chitry-le-Fort, on the edge of Chablis, since roughly 1650. Olivier Morin took over the eleven-hectare domaine in 1992 after a decade working as a radio announcer, and now farms organically with his wife Nelly, fermenting on native yeasts and using only homeopathic doses of sulfur at bottling. Constance is 100% Chardonnay grown on the same chalky, Kimmeridgian limestone that underlies Chablis itself, just across the valley.
