Chateau l'Escarelle farms 100 hectares of certified-organic vines around La Celle, in the Sainte-Baume Regional Nature Park of Provence. Le Pacha is named for a rare local butterfly found on the estate's own Butterfly Garden; it is a 60% Syrah / 40% Grenache rose, harvested at dawn, vinified in stainless steel with a short skin maceration and no malolactic fermentation to preserve freshness.
