Brooklyn Kura, one of the first sake breweries in New York State, brews with Catskill Mountains water at its Brooklyn kura. Catskills is a Junmai Daiginjo made from 100% Yamada Nishiki rice with a single modern yeast strain, fermented below 11 degrees C.
