Occidental begins as a traditionally brewed, single-yeast Tokubetsu Junmai from Brooklyn Kura, then is gently dry-hopped after fermentation and pressing -- the hops lend an initial green tint that evolves, with oxygen and age, into the sake's signature pink hue.

A nose of grapefruit zest over a rose-hued, velvet-smooth palate with a lightly honeyed character and a citrus-rind finish.
