Profile & Story

Mii no Kotobuki, established in 1922 in Kyushu, brews in small, slow-paced batches; Master Brewer Tadatsugu Inoue has made the sake since 1996. Hojo Biden uses Yamada Nishiki rice from Ito milled to 70%, house-cultivated Kyokai #7 yeast, and water from the subterranean Koishiwara River, fermented in the traditional yamahai style and aged two years in bottle before release.

Tasting Notes

Clean and vibrant, with vanilla, almond, and honey; brewed a touch sweeter than most sake, its off-dry flavor balanced by a stronger alcohol presence and higher acid from the yamahai method.
