Sebastien Christophe began in 1998 with 0.6 hectares of Petit Chablis above the Grands Crus and now farms more than 30 hectares spanning Petit Chablis, Chablis, three premier crus (Fourchaume, Mont de Milieu, Montee de Tonnerre), and the Grand Cru Blanchot from his cellar outside the hamlet of Fye. He began organic conversion in 2021; grapes are hand-harvested, spontaneously fermented, and aged principally in steel, with less than 10% oak for the cru bottlings.
