City Bubbles (full name 'City Winery Bubbles') is a Cava created by City Winery in partnership with importer Ole & Obrigado, sourced from what the importer describes as the largest vineyard owner in Spain's Penedes region - a grower that keeps only about 40% of its own fruit for bottlings like this one and sells the remainder in bulk. It is a traditional-method blend of Macabeo, Xarel-lo and Parellada from vines planted in 1995 on limestone, clay and sandy soils at 100-500m elevation, made with secondary fermentation in bottle and aged a minimum of 12 months on lees (beyond Cava DO's 9-month legal minimum). 11.5% ABV; certified vegan.

Pairing Recommendation

Pairs well with tapas, small plates, and seafood-focused dishes; also enjoyable on its own as an aperitif.
