Profile & Story

Dolce Rosso is one of Domaine Comte Abbatucci's Parcellaires, made from 100% Aleatico grown on granite-arena soils in the certified-biodynamic vineyards of the Taravo Valley (Ajaccio, Corse-du-Sud). It is a naturally sweet dessert wine, produced by late-harvest or passerillage (drying the grapes off the vine in boxes) rather than fortification - not fortified. Grapes are gravity-fed and destemmed according to stalk maturity; skin maceration and partial alcoholic fermentation take place in stainless steel, with fermentation halted by cold and a sulphur addition to retain natural sweetness, then the wine is racked and aged in stainless steel for several months before filtration and bottling. Alcohol approximately 14%. Kermit Lynch's importer notes on this cuvee describe roughly 9 months' ageing in demi-muid, about 80 g/L residual sugar, a November harvest, and fermentation over two months in 300-litre barrels, from around 20-year-old Aleatico vines on 0.2 hectares of sandy granite soil.

Tasting Notes

Dark red colour with intense garnet highlights. A dessert wine par excellence - heady yet very aromatic, marked by aromas of muscat grape, rose petals, and notes of cocoa.

Pairing Recommendation

Serve at 16°C. Pairs well with chocolate desserts, red-fruit salads, or sorbets.
