Profile & Story
The red Faustine - named, like the rest of the range, for Jean-Charles Abbatucci's daughter - is a blend of roughly 70% Sciaccarello and 30% Nielluccio grown on granite arena soils in the domaine's certified-biodynamic vineyards in Corsica's Taravo Valley (Ajaccio, Corse-du-Sud). Fermentation is spontaneous in concrete vats, followed by six months' ageing in stainless steel. Alcohol 14.5%. Sciaccarello's name refers to the way its berries crunch underfoot when ripe; in this blend it lends freshness and bright red-fruit character, while Nielluccio contributes structure and density.
Tasting Notes
Cherry colour with ruby highlights. Aromas of red fruits, wild berries, pepper, and spices, with silky tannins and a fruity finish - vibrant and resinous, reminiscent of freshly harvested red berries and pomegranate seeds, its freshness and light hue belying an impressively structured, dense palate.
Pairing Recommendation
Serve at 14-16°C. Pairs well with grilled meats and Corsican cheeses.
