Profile & Story

Cappellano is a historic Barolo producer in Serralunga d'Alba that pioneered Barolo Chinato in the 1890s. It is made by fortifying and aromatizing the estate's own Barolo (Nebbiolo) with a neutral spirit infused with 54 herbs and spices, notably quinine ('china'), plus sugar.

Tasting Notes

Complex aromas of sarsaparilla, spearmint, black licorice, bittersweet chocolate, dried rose and quinine; enters sweet, then shifts to spice with a long, gently bitter, tannic finish.
