Pheasant's Tears was founded in 2007 by American painter John Wurdeman and Gela Patalishvili, whose family has made wine in Georgia for eight generations, based in the mountain village of Sighnaghi in Kakheti. Their estate Saperavi ferments on the skins in traditional qvevri using a semi-carbonic approach to soften the grape's naturally big tannins, is aged in qvevri and then stainless steel, and is bottled unfined and unfiltered at 13% ABV.
