So Far Out is the Santa Barbara natural-wine project of winemaker Andrew Jones (Field Recordings), together with fifth-generation local farmer Mike Testa and Jamil Williams. "Memory Palace" is a 100% certified-organic Sauvignon Blanc sourced from Santa Ynez Valley vineyards, fermented entirely in stainless steel to preserve freshness; the region's cooling marine air and diatomaceous, limestone, and sandy-loam soils allow slow, even ripening that keeps the grape's citrus and herbaceous character and acidity intact. 13.1% ABV.
