A grower Champagne from the Montagne de Reims, where sixth-generation vigneron Maxime Ponson farms the chalky soils of the Petite Montagne de Reims organically (certification in progress). The Premier Cru cuvee, formerly labelled 'Prestige', is 70% pinot meunier, 15% pinot noir and 15% chardonnay, drawn entirely from first-press 'tetes de cuvee' juice. It is vinified 90% in stainless steel and 10% in oak barrel, given an additional year of cellar ageing, and finished at 7 g/L dosage in this Brut version.
