Chiara Condello (first vintage 2015) farms ~4.8 ha of organic Sangiovese on Predappio's fossil-rich 'spungone' sandstone in Emilia-Romagna. Inspired by the late Giulio Gambelli: open-top fermentation, extended maceration and ageing in large neutral vessels.
