I Vigneri di Salvo Foti: 100% Carricante from Contrada Caselle in the commune of Milo, eastern Etna, at 750 m on volcanic sandy soils (ripiddu). Ungrafted alberello-trained vines (~8,000/ha). Whole-grape direct pressing, ~30 hours' natural settling, indigenous-yeast fermentation and 12 months in 2,000 L wooden barrels; minimal sulphur; ~12% ABV.
