Domaine Girault is a family estate in Bué, at the northern edge of Sancerre, farming roughly 35-year-old Sauvignon Blanc vines sustainably across 31 separately-vinified parcels split 60% clay-limestone and 40% pure limestone. Grapes are pressed under nitrogen to limit oxidation, cold-settled, and fermented in thermo-regulated tanks over about 40 days, then aged on fine lees through the winter before an April racking and bottling.

Pairs with seafood, raw vegetables, salads, cold cuts and cheese; also good as an aperitif with terrine or fowl.
