Parés Baltà is a family winery established in 1790 in Pacs del Penedès, Barcelona, known for organic and biodynamic winemaking. This Cava Brut Nature is made from the traditional Penedès trio of Xarel·lo, Macabeu and Parellada, undergoing second fermentation in bottle by the traditional method and aged around 24 months on its lees. Certified organic and vegan.
Tasting Notes
Golden yellow in color from its extended lees aging. An intense nose of pastries and lactic notes over very ripe white fruit; smooth, structured entry with light toasted and yeasty notes from the aging process, finishing long and complex.
